A deep dive into olive oil’s composition, the cold-press process and the benefits of a quality product.

Quality olive oil is stable up to 410°F. Cooking with olive oil is the principle manner in which the Greek cuisine is based on. Due to its resistance olive oil is the most suitable oil for cooking and frying, as it can be used even up to 10 times in a row to fry meat or sardines without losing its digestible substances. Olive oil, due to its composition, remains on the surface of foods without penetrating them, while other fats penetrate the foods and alter their nutritional value. Their action is particularly toxic, affecting the stomach, the liver, the heart and blood circulation, the kidneys and furthermore they damage the nutritional value of the food itself.

Did you know? Adulteration: With deodorized hazelnut oil  this is the latest in the illegal trade in mixing olive oil with seed oils. Hazelnut oil is difficult to trace, even in high quantities , due to certain similarities with olive oil fatty acids. But the real big news are about a giant North American company planning to produce from genetically engineered soya beans, an oil that will have the aroma and the colour of the Cretan (Crete-Greece) olive oil.
